Thai Circus Boy Skewers


I love Thai food, but have not yet mastered a recipe that not only I appreciate but my not so culturally-food-embracing friends would enjoy. The ingredients in most Thai recipes aren’t the usual ones I keep stocked. When I realized that the Circus boy had that lemon grass lingering tones I knew it would be a perfect addition as a marinade.
Ingredients1 Pound Boneless Chicken Breast

15 Bamboo skewers

Chicken Marinade:
½ A 12fl oz of Magic Hat Circus Boy
¼ Cup Chopped Cilantro
1 Tbls Chopped Ginger
2 Tbls Soy Sauce
2 cloves chopped garlic
1 tsp Yellow curry
Salt/Pepper

Dipping Sauce:
1 Cup light sour cream/ Plain yogurt
¼ Cup Chopped Cilantro
1 Tbls Soy Sauce
1 Tbls Orange Juice
Cooking InstructionsMix the marinade ingredients together at least an hour before expected serving time. The earlier the ingredients are mixed the more time the chicken has to marinade, therefore leading to more tender succulent chicken. Once marinade is mixed place chicken in mix, cover then let sit in fridge.

After desired marinade time (I prefer 6hrs) place chicken on grill. Leave on for about 8 minutes or until cooked thoroughly.

Stir fry style rice goes nicely with the dish. Once the stir fry blend starts to stick to the bottom of the pan, pour the other half of the Magic Hat Circus Boy in.
